365 Challenge Day 314 – More Jars

Okay, I know I’m getting a little too excited about my jars, but they just work SO WELL!!  I’m tempted to throw away all my plastic tupperware, but I’m not quite there yet.

This week I made my own homemade almond milk and cashew milk.  It’s much yummier than the store bought brand because they add so much water.  Nuts are expensive but I’m prettier sure mine ends up being a lot cheaper.  The only downside is it doesn’t keep long, I can only make a couple of days worth at a time because it spoils.  I wish I could make up a whole batch on the weekend for the week.  Oh, I just thought of a good plan.  I can make almond milk on the weekend because it requires slightly more work (straining the fiber through a nut bag) while the cashew milk is super easy, no straining required, so if I have to replenish mid-week on a work night, I’ll make that.

And yes, as pictured below, I’m back on coffee : )  And yes, I’m drinking it out of a jar!

365 Challenge Day 309 – Oats

I’m so friggin’ organized this week I can’t even believe it.  I made up a huge batch of steel cut oats.  It turned out so delicious.  I put in fresh chunks of gala apples, raisins, cinnamon, and some clove.  All organic of course.  I dished it out into containers for the week (so domestic!) Oh, and I sprinkled some chopped pecans on top.  I bring this to work because I eat breakfast there.  I don’t need any milk or sweetener, I eat it just like this!

365 Challenge Day 308 – Pasta

I read a bit of a blog on eating for less than $30 a week.  One of the tips they gave was to limit the amount of veggies you buy, and then use them in multiple dishes throughout the week.  This seems so obvious but is something I’ve never been good at!! I’m terrible about buying up a bunch of veggies, using a little, letting it rot in the fridge, buying more, etc.

So after three days in a row of my rice, beans, and veggies mix, I started to get a bit bored of it.  I came up with a brilliant solution!  I cooked some rice pasta (I already had two half used bags in the cupboard) added in the veggies I had cooked, added some vegan cheese, and white beans, and tomato sauce (again, already opened in the fridge, probably would have gone bad) and voila!  A veggie casserole!  Enough for three, big, hearty meals.

These are my pint and half mason jars.  One great thing about them is they are slender so they can easily fit in the fridge!

365 Challenge Day 307 – Rice and Beans

I ate so much fish when I was in Costa Rica, that I’ve been taking a break eating vegan again and it feels really good.  My digestion is still off, but I’ve been taking lots of probiotics and it seems to have helped.

BTW – Can I tell you again how much I love mason jars???

I cooked up a bunch of rice and beans on the weekend, and a bunch of mixed veggies.  I packed them all up into these little serving containers so I could easily throw them in my bag in the morning before heading to work.  It helps that I was on vacation when I planned all this.

I made a fresh spice mix with jalapeno, parsley, garlic, and salt, and a little olive oil, and used this as a base for both the rice mix and the veggie mix.  It’s still a little bland, but I ate it with some fresh avocado, and it was good!!  (And cheap.  I’m trying to replenish my savings after my trip.)

365 Challenge Day 275 – Soy

I know there is a lot of controversy around soy products, like how they can mimic estrogen and affect our hormone levels, but I’ve never been worried about that. In fact I have always suspected that the soy controversy was instigated by the dairy industry. I love soy, it’s so rich and creamy and delicious, and unlike most other non-dairy milks, soy milk has a lot of protein in it.

However, I do have a problem. I’m allergic. When I was having some serious health problems about 10 years ago I got a full panel of allergy tests, and soy came up as a mild allergy. At first I eliminated all allergens. My health improved immensely. But eventually I added soy back in because the allergy was mild (some were really high, like eggs and dairy) and I didn’t feel like I was having much of a reaction.

Well, when I gave up coffee I also gave up soy, and I have to say I do feel better. It’s hard to tease it out since I gave them both up around the same time, but I’m going to try to stick with it and see how it goes. Plus, I probably cut several hundred calories out of my day by switching from big soy lattes throughout the day to plain green tea.

365 Challenge Day 252 – Green Smoothie +

I’m bringing my green smoothies to a new level! I’m very excited about my brown rice protein! Free from allergens, easy to digest, vegan, and totally healthy. I have to admit it’s not the most delicious thing I’ve ever had… I made a smoothie with blueberries, mixed greens, and rice protein. It was… Okay. I’m sure it would be easy to make it more delicious if I wanted to add sweetener or more fruit. But for now I’ll stick with this and try to acquire a taste!! I’ll tweak it a bit. It definitely felt chocked full of healthy goodness!!
